Hi, i’m Sarah.

My background is in marketing and brand strategy - fifteen years of it, across hospitality, sustainability, and purpose-led businesses. But the most important thing I've done professionally isn't on a client list. It's Flat Earth Pizzas: the meat-free, waste-free restaurant I co-founded in Hackney, which I built from a pop-up into a permanent site, grew to profitability within eight months, and ran until very recently. Ranked among London's best sustainable restaurants by Time Out, Condé Nast Traveller, the Evening Standard, and Olive Magazine. A 4.8-star rating. A genuine community cornerstone.

I built it end-to-end - the brand, the space, the team, the supply chain, the drinks programme, the events, the sustainability systems, the storytelling. And what that experience gave me, beyond the operational knowledge, was a much more honest understanding of how culture and commerce actually work together. Not as a theory. As a daily practice.

I'm also a painter - which sounds like a non-sequitur but isn't. It means I think visually and spatially, not just strategically. I've directed photoshoots, shaped physical environments, and made creative decisions that lived in rooms and on walls rather than in decks. I bring that sensibility to everything I do. I also interrogate data and build commercial hypotheses: the +37% EBITDA growth I contributed to at Comptoir Group, the 122% uplift in promoted item sales at The Restaurant Group, the Flat Earth kitchen running 30% below industry average on food waste - these weren't accidents. They were the result of understanding that creativity and commercial rigour aren't in tension. They're the same thing, done properly.

I’ve worked across multi-sectors from QSR and casual dining, to high end restaurants and premium bars. I’ve held positions in-house with large corporate companies as well as start ups and independent businesses, harnessing the best way to work for maximum results within marketing.

I became an independent consultant in 2016 and have built up a tool kit of tried and tested methods for success that can be adapted to suit the needs of many different hospitality businesses.
